Flavored Fruit Mix

My mom always makes this as a side, dessert, or sweet, fruity snack!

Mom's Fruit Salad

1 pkg Instant French Vanilla pudding (yes, some brands are dairy free!)
Grapes
Canned fruit of choice:
Peaches
Cherries
Pineapple (chunks)
Mandarin Oranges


In a large bowl, mix the pudding together with the juices from the fruit.  Once the clumps are gone, toss in all the fruit. Mix together and store in the fridge. 

It's really, really yummy!!!

White Chicken Chili

My sister in law made this for us last fall cause she knew I could eat it!!!  It is super yummy and great for these cold, dreary, wintery nights!!
 
 
White Chicken Chili

1 Tbsp Olive Oil
1 Medium onion (i use frozen)
4 oz green chiles
3 Tbsp all purp flour
2 tsp cumin
2 cans white beans
1 can chicken broth (read ingredients carefully)
1 1/2 cup finely chopped cooked chicken
 
 
Cook onion in oil until transparent.  Add in chiles, flour, and cumin.  Heat for 2 minutes then add beans and broth.  Bring to a boil and reduce heat. Continue to simmer for 10 minutes or until it thickens.  Add chicken.
 
 
**If you can't have flour, try cornstarch (if that's safe!!)

TRASH or Puppy Chow

My family calls it TRASH.  My in-laws call it Puppy Chow.  However, we all agree that this is super yummy and a great sweet treat.  And guess what??  You can even make it dairy and nut free!! I did it.  It was super yummy.  NO ONE could tell a difference. 



 
And my allergy child didn't even like it =( BOO!!!!  Oh well.....I was a little bummed but at least I can share it with you!!!
 
 
Trash (or puppy chow)

1 stick safe margarine
12 oz safe chocolate chips (we like trader joes or enjoy life)
1 cup of soy butter (almond would prob work too)
Regular size box of rice chex
12-16 oz of powdered sugar (your preference)
 
Melt margarine, chocolate chips and soy butter in a large pot.  After melted, remove from heat and add in box of chex mix.  (i usually leave a little in the box...i like a lot of chocolate and when they stick together!)  After chex mix is coated with chocolate then dump into a large bowl with a lid that seals.  Add in powedered sugar and shake!!! 
 
One of my mom's friends used to shake it in a large brown grocery bag?!  It works too!!

Homemade Bread in a Bread Machine

One of the most staple items has milk, soy, and exposure to many other allergens.  My resolution:  MAKE YOUR OWN!!!

If you don't have a bread machine and intend to do this diet for a while, it will be a good investment!!




Plus, it kinda grosses me out when I read a bread label.......it has 25 ingredients when bread only requires A FEW!!!  CRAZY!!!!

Whole Wheat Bread (for the bread machine)

4 cups whole wheat flour
1 1/2 c warm water
2 1/4 tsp yeast
1 1/4 tsp salt
2 Tbsp olive oil or butter*
1/3 c honey

Place into your machine according to the manufacter's instructions.  For example, all my liquid ingredients go in first.  Then my flour and then i make a small hole in the center of my flour and put my yeast (making sure it doesn't touch any liquids)

**You can use this for cold sandwich but the bread can be kinda crumbly.  It's excellent for hot sandwiches and a side to soup!!

Fruit Salsa and Homemade Cinnamon Chips

I just made this on Sunday for a baby shower and it was a hit!! It's usually my "go-to" recipe for showers when we're looking for something with fruit but different!
 
I got this recipe from Pampered Chef! (I LOVE their products!)
 
 
Ingredients needed:
2 Granny Smith Apples
1 Pint Strawberries
2 Kiwis
1 Orange
2 Tbsp packed brown sugar
2 Tbsp apple or apricot jelly
 "safe" Tortillas
Water (or safe melted butter/cooking spray)
Sugar and Cinnamon mix
 
 
Peel the apples and kiwi.  Dice up all the fruit and place into a bowl.  Zest 1 tsp of the orange onto the fruit.  In a seperate bowl juice the orange to equal 2 Tbsp.  Then add in the brown sugar and jelly.  Stir until mixed.  Add to fruit.  Store in fridge.
 
Cinnamon Chips
Preheat oven to 400 degrees.  Cut the torillas into strips or triangles and arrange a single layer onto a pan.  Sprinkle with water or brush with butter.  Sprinkle cinnamon and sugar on top.  Bake for 8-10 minutes until edges are slightly crispy!!

Fudge Crinkle Cookies

These cookies are DELICIOUS!  Seriously, you can't eat just one.  I dare ya. Try it.  It won't happen!

I found this recipe here!
Ingredients:
1 box Duncan Hines Devil's Food Cake Mix
1/2 cup veggie oil
2 eggs
powdered sugar for rolling

Directions:
Preheat oven 350
Mix your ingredients together.
Roll into 1 inch balls.
Dip into the powdered sugar
Bake 8-10 minutes until they are just set (don't over bake---gooey is better here!)


THEY ARE SOOO YUMMY!!  AND EASY!!!

Hang in there for the Holidays

The holidays are HERE!!!  Our Christmas tree is up.  The cards are sent out.  We've even made a few treats!!

Last year, I remember thinking....How in the world am I going to do this (without any allergens)?  Pass up the chocolate fudge, the rolls, the butter. 

Well,I found some good substitutes and just held my head up high as I passed up on several foods that were "contaiminated" =)


Hang in there.
